1 lb baby purple potatoes, quartered

1 tbsp olive oil

1 tsp cumin

1 tsp coriander

1 tsp Kosher salt

Fresh ground black pepper, to taste


Corn Salsa

3 ears corn, nibbles cut from cob

2 clives garlic, minced

1 poblano pepper, diced

1 tbsp olive oil

1/2 tsp Kosher salt

Fresh ground black pepper, to taste

Juice from 1/2 a lime

1/4 cup chopped cilantro


Black Bean Dip

1-15 oz can black beans, rinsed and drained

1/2-1 lime, juiced

2 cloves garlic

1 tsp cumin

2-3 tbsp olive oil

1/2-3/4 tsp salt


Pickled Red Onions

1 thinly sliced red onion

1 garlic clove, smashed, cut into pieces if using multiple jars

1 cup apple cider vinegar

1 cup water

2 teaspoons cane sugar

2 teaspoons sea salt

1 teaspoon whole cumin seeds, optional


Salad Ingredients

purple and green cabbage, shredded

1 cup cherry tomatoes, halved

1 cup sliced red onions, pickled


Avocado Vinaigrette

1 ripe avocado, diced

2 tbsp apple cider vinegar

4 thin green onions, whites roughly chopped

1 tbsp olive oil

1/2 tsp ground coriander

1/2 tsp Kosher salt

Fresh ground black pepper, To Taste

3/4 cup water


Roast the Potatoes

In a bowl , combine the quartered potatoes, olive oil, and spices. Mix to evenly coat the potatoes. Roast at 350°F oven for 20-25 minutes or until the potatoes are golden brown and crispy. Set aside.

Pickle the Onions

It is best to do this ahead of time, the longer the onions sit in the pickling liquid, the better they will be!

In a large lidded jar place the red onion, and garlic.


In a small pot over medium heat, combine the apple cider vinegar, water, sugar, salt, and cumin seeds, if using. Simmer until the sugar and salt dissolve, about 1 minute. Pour the brine over the onions mixture in the jar(s).


Cover and shake gently to submerge the onions in the brine. Uncover and let cool to room temperature, pressing the onions down if needed to fully submerge it. Cover and chill for at least 1 hour or overnight.


Char the Corn

Place olive oil, corn, garlic, and poblano pepper in a pan over medium heat. Season with salt and pepper. Cook until the corn starts to char and the pepper is soft, about 10 minutes. Once charred, squeeze the lime juice and add the cilantro. Mix to combine. Set aside to cool. Garnish with pickled red onion if desired.
